Nopal Salad PDF Print E-mail

Have you ever had cactus in your salad?  You'll love the flavor of it!

Ingredients

*
1 lb. fresh cactus paddles (nopales), cooked and diced
*1/2 sm. white onion, slice into very thin rings
*2 cloves garlic, roasted and minced
*1 lg. ripe tomato or 4 plum tomatoes, diced
*1 scant tsp. dried oregano
*juice of 1 lime
*1 tsp. crushed dried red chile
*3 Tbs. extra-virgin olive oil
*sea salt and freshly ground pepper
*4 Tbs. minced cilantro
*4 inner leaves romaine lettuce
*4 Tbs. crumbled feta cheese
*2 radishes, sliced

Directions

Toss together cactus, onion, garlic, tomato, and oregano in a medium bowl.  Sprinkle with lime juice and crushed chiles, then add just enough oil to bind ingredients together. Season to taste.  Toss with cilantro just before serving and scoop onto small romaine leaves.  Top with crumbled cheese and radish slices.
