This is a traditional dish that is eaten on Christmas Eve.
Ingredients
*6 sm. beets, cooked, peeled, and diced *3 crisp apples, peeled and diced *3 oranges, peeled, sectioned, and cut into 1/2-inch pieces *1 med. jicama, peeled and cut into matchstick strips *1 C. shelled, roasted, unsalted peanuts, coarsely chopped *4 Tbs. sugar *1/4 C. rice vinegar or other mild vinegar *2 Tbs. olive oil *sea salt *3/4 C. club soda *2 bananas, sliced *1 C. cubed fresh or canned pineapple *1 head of iceberg lettuce, thinly sliced
Directions
In a large bowl, mix together beets, apples, oranges, jicama, and peanuts. Dissolve sugar in vinegar and whisk in oil. Add salt to taste and pour over fruit. Add club soda and gently mix all ingredients together with your fingers. Refrigerate, covered, for 1 hour. When near time to serve, mix in bananas and pineapple. The lettuce can either be tossed together with the fruit or used as a bed with the fruit spooned on top.
