Sweet Stuffed Peppers PDF Print E-mail

Try baking your stuffed peppers peppers in a crock pot for a more slow cooked flavor. Serve this dish with tortilla chips on the side.

Ingredients

* 1 lb. chorizo sausage
* 1lb. lean ground chuck
* 2 (15 oz.) can whole yellow corn
* 1 (8 oz.) can tomato sauce
* 1 lg. yellow onion
* 3 cloves garlic, finely chopped
* 6 sweet bell peppers, tops removed, seeds cleaned out
* 1 (24 oz.) can tomato juice
* 4 oz. mozzarella cheese

Directions

Heat oven to 350 degrees. Mix all your ingredients except tomato juice. Stuff mixture into bell peppers and place in a 3-quart casserole dish. Take any left over mixture or ingredients and work around peppers in the dish. Add tomato juice. Bake for 1 hour and 30 minutes. Top with mozzarella cheese.
