This quick chili is delicious and very filling! The addition of sweet potatoes makes it a unique dish.
Ingredients
* 2 medium to large sweet potatoes * 2 Tbs. olive oil * 1 C. chopped onion * 2 to 3 garlic cloves * 1 medium red bell pepper, diced * one 32-oz. can black beans, drained * one 82-oz. can diced tomatoes * 1 or 2 fresh hot chilies, minced * 2 tsp. ground cumin * 1/2 tsp. dried oregano * salt to taste
Directions
Bake or microwave the sweet potatoes until just firm (about 3 to 4 minutes per potato). Cut into 3/4 inch dice. Heat oil in a soup pot. Add onion and garlic and saute over medium heat until golden. Add bell pepper, beans, tomatoes, chilies, cumin, and oregano. Bring to a simmer. Cover and let simmer for 15 minutes. Add sweet potatoes and simmer until vegetables are tender. This should take about 10-15 minutes. Season with salt. If time allows, let stand for 1 or 2 hours, then re-heat and serve.
