Given to me by a friend while we lived in California. Very good recipe. Great with tacos, burritos, or my Chili Rellenos Recipe. Hope your family will enjoy these as much as my family does.
Ingredients
* 1 lb. dry pinto beans * 1/2 C. Monterey Jack cheese, shredded * 1/2 C. bacon grease * salt to taste
Directions
Sort beans, removing rocks. Rinse thoroughly. Put in large cooking pot and cover with water. Bring to a boil. Lower heat; cover. Simmer until done (approximately 3 hours), adding water as needed. (Beans should be covered with water at all times.) When done, drain all liquid except for 1/2 cup. Transfer beans to skillet; mash. Add bacon grease, cheese, and liquid. Heat thoroughly.
