You only need four ingredients to make your very own refried beans!
Ingredients
*2 1/2 C. dried pinto beans *1/2 C. onion, chopped *1/2 C. lard *salt
Directions
Place beans in a large saucepan with enough cold water to cover them. Let stand at room temperature overnight. Drain, then place beans back into saucepan. Add onion and enough water to just cover beans. Bring to a boil, reduce heat, and simmer, covered, until the beans are tender and will mash easily, about 2 1/2 hours. Remove from heat and drain, reserving about 1 cup of cooking liquid. With a potato masher, mash beans in the pot until they are a blend of smooth and chunky. Add some of the cooking liquid if necessary. Stir in the lard and cook over medium-high heat, stirring constantly, until fat has been absorbed and beans are hot. Season to taste.
