These black beans are simmered for hours and have a fantastic flavor to them.
Ingredients
*1/4 C. vegetable oil *1 lg. onion, chopped *2 cloves garlic, chopped *2 1/2 C. dried black beans, picked over *1 tsp. dried oregano leaves, crumbled *8 C. water *1 tsp. bottled liquid smoke flavoring *salt
Directions
In a large pot over medium-high heat, heat oil, then add onion and garlic. Saute until the onion has softened, about 4 minutes. Stir in beans, oregano, and water, and bring to a boil. Reduce heat and simmer, covered, until the beans are tender, about 2 1/2 hours. If beans are too soupy, continue to cook uncovered until thickened. Stir in liquid smoke flavoring and season to taste.
