Refried Beans with Bacon PDF Print E-mail

Love these refried beans!!!


Ingredients

*2 1/2 C. uncooked pinto beans
*4 slices bacon
*1 lg. white onion
*2 garlic cloves
*4 lg. tomatoes
*1 tsp. salt
*1 tsp. ground black pepper
*1 tsp. dried oregano
*1 tsp. ground cumin
*1 C. beef broth

Directions

Soak beans overnight in 5 cups water.  Drain and place in a large saucepan on medium heat.  Add 4 cups water.  Cover and cook until tender but not mushy, about 2 hours.  Remove from heat and drain.  In a large frying pan, fry bacon until crisp.  Set the bacon on a paper towel to drain grease.  Chop roughly.  Remove skin from onion and chop into 1/4-inch pieces. Remove skin from garlic and mince.  Add onion and garlic to bacon grease and saute on medium heat until golden brown.  Cut tomatoes into 1/2-inch pieces. Add tomatoes and beans to onions and garlic in frying pan.  Stir together.  Add salt, pepper, oregano, and cumin. Mix thoroughly.  Stir in chopped bacon. Stir in beef broth.  Cover and simmer on medium-low heat for 20 minutes.
