Beef Soup PDF Print E-mail

Known as "caldo de rez" in Spanish, this beef stew is unforgettable!

Ingredients

*1 1/2 lbs. beef stew meat
*1 med. cabbage
*1 sm. white onion
*1 celery rib
*4 med. red tomatoes
*1/2 green bell pepper
*4 med. baking potatoes
*1 tsp. dried cilantro
*1 tsp. salt
*1/2 tsp. ground black pepper
*1 tsp. Tabasco

Directions

Remove any fat from stew meat.  Cut cabbage into wedges.  Peel onion and chop into 1/4-inch pieces.  Chop celery into 1/4-inch pieces.  Cut tomatoes into 1-inch pieces.  Remove stem and seeds from bell pepper, then chop into 1/4-inch pieces.  Peel potatoes and cut into 1-inch cubes. Place all the ingredients into a large pot and stir until well mixed.  Cover and bring to a boil.  Reduce temperature to medium-low and simmer for 30 minutes.
