Mexican-Style Pot Roast PDF Print E-mail

This recipe is super simple and serves 6!

Ingredients

*3 Tbs. olive oil
*one 3-lb. pot roast
*1/2 C. flour
*1 lg. yellow onion
*1 garlic clove
*6 med. red tomatoes
*4 fresh morita chilies
*1/4 tsp. dried oregano
*1 tsp. salt

Directions

Preheat oven to 350 degrees. Heat olive oil in a large skillet over medium heat.  Dredge beef in the flour by pounding flour into the meat until no more flour will stick.  Place beef in skillet. Cook, turning until meat is brown on all sides.  Peel onion and garlic clove.  Cut onion into 1/4-inch thick rings and mince garlic.  Cut tomatoes into 1-inch pieces. Stem and seed chilies and cut into 1/4-inch pieces.  Place pot roast in a roasting pan.  Sprinkle with oregano and salt, then cover with remaining ingredients.  Cook, covered, for 2 hours.
