Mexican-Style Meatloaf PDF Print E-mail

This meat loaf has some added kick to it!

Ingredients

*1 lg. white onion
*1/4 C. pimiento-stuffed green olives
*3 eggs
*1 lb. ground beef
*1/2 lb. ground pork
*2/3 C. uncooked oats
*1 tsp. salt
*1/4 tsp. ground black pepper
*1 C. red chili sauce

Directions

Preheat oven to 350 degrees.  Peel onion and chop into 1/4-inch pieces.  Slice olives into 1/4-inch rounds. Boil 2 eggs for 10 minutes. When cool, slice into 1/4-inch rounds.  Beat remaining egg until white and yolk are well mixed.  Combine beef, pork, onion, oats, salt, pepper, 1/2 cup chili sauce, and beaten egg.  Mix with your hands until well blended.  Pack half of meat mixture into an 8x4x2-inch loaf pan. Arrange hard-cooked eggs in a row down the center of the loaf.Arrange olive slices on either side of the eggs. Press eggs and olives slightly into the meat mixture.  Cover with remaining half of meat mixture.  Pour the remaining 1/2 cup chili sauce on top. Bake for 1 hour.
