Ricky Ricardo's favorite dinner!
Ingredients
*1 lg. fryer chicken *2 tsp. salt *1 med. onion *4 lg. tomatoes *1 garlic clove *4 Tbs. shortening *1 1/2 C. uncooked brown rice *1 tsp. black pepper *1 tsp. cumin seeds *2-3 C. water
Directions
Cut chicken into 8 serving pieces. Sprinkle salt over chicken pieces. Remove skin from onion and slice into 1/4-inch rings. Cut tomatoes into eighths. Remove skin from garlic and mince. Melt shortening in a large frying pan over medium heat. Add rice and stir constantly until rice is browned. In a separate frying pan, brown chicken over medium heat. Place chicken pieces over rice, then add tomatoes, onion, garlic, spices, and warm water. Cover and simmer over low heat until rice is tender and fluffy. If mixture dries before rice is cooked, add more water.
