Chalupas PDF Print E-mail

Cheesy chicken chalupas always make my kids smile!

Ingredients

*12 corn tortillas
*1 1/4 C. chicken stock
*1 lb. Monterey Jack cheese
*1 C. sour cream
*2 C. cooked, shredded chicken
*1 tsp. paprika

Directions

Soak the tortillas in 1 cup of the stock.  Grate the cheese. Combine remaining 1/4 cup chicken stock with the sour cream.  Layer ingredients in a casserole as follows: single layer of soaked tortillas, chicken, sour cream mixture, and cheese. Repeat until all ingredients are used.  Cover and refrigerate at least 8 hours.  Preheat oven to 350 degrees. Bake, uncovered for 1 hour.
