Southwest Chicken Sandwiches PDF Print E-mail

Grill or broil the chicken in this southwest chicken sandwich. The south-of-the-boarder flavors really come to life in this recipe, especially when you ad just a dash of Tabasco sauce to each sandwich.

Ingredients

* 5 skinless, boneless chicken breasts
* vegetable or oil oil
* 1 (1 oz.) pkg. taco seasoning mix
* 3 oz. Monterey Jack cheese, cut into 5 slices
* 5 lettuce leaves
* salsa
* 5 onion bagels, split and toasted

Directions

Rinse chicken; pat dry. Lightly brush both sides of chicken with oil. Place seasoning mix in shallow dish. Add chicken; turn to coat evenly. Grill or broil chicken, 4-5 inches from heat source, 12-15 minutes, turning once. Top with cheese; grill or broil until cheese melts. Place a lettuce leaf on each bagel bottom; top with chicken and a spoonful of salsa. Add bagel top.
