Spicy Prune Sauce Chicken PDF Print E-mail

To some it may sound strange to add soda to this recipe but you will be pleasently surprised by the sweet flavor that is created when blended with dried fruits. This spicy prune sauce chicken promises not to dissapoint. Ingredients

* 1/4 C. safflower oil
* 2 lbs. chicken thighs
* 1 tsp. sea salt
* 1 lg. white onion, thinly sliced
* 1 C. roughly chopped pitted prunes
* 1 C. raisins
* 2-3 canned chipotle chillies, chopped
* 2 cans Coca-Cola or Pepsi

Directions

Heat the oil in a large skillet with a lid. Add the chicken pieces and brown on all sides. Season to taste with salt. Remove the chicken, add onion and saute. Pour off excess oil. Return the chicken to the skillet, lower heat, cook for 5 minutes. Put the prunes, raisins, and chipotle chiles in a blender with some of the cola. Blend until smooth. Continue to blen in the remaining cola. Pour the prune sauce over the chicken, stir, and simmer, covered, for about 30 minutes, until the sauce thickens.
