Green Sauce Chicken PDF Print E-mail

The sauce is what really makes this chicken recipe sizzle, use a variety of chilies to give an even more flavorful and spicy kick to your meal.

Ingredients

* SAUCE:
* 8 fresh tomatillos, husked and rinsed
* 1/4 med. white onion
* 2 cloves garlic
* 3 serrano chiles, stemmed, quartered, seeded
* 1/3 C. chicken broth
* CHICKEN:
* 2 Tbs. canola oil
* 4 pieces boneless chicken breasts
* sea salt
* fresh ground black pepper

Directions

Heat a small skillet, no oil. Toast the tomatillos, onion, and garlic, and toss them around as they start to blister. When the flesh of the tomatillos softens, put them in a blender. Peel the garlic and add it, along with the serrano chilies, onion, and chicken broth. Blend until smooth. In a large skillet, warm the oil and saute the chicken until it is golden brown. Turn down the heat and add the tomatillo sauce. Add salt and pepper to taste. Let simmer, covered, for 30 minutes, add more broth if needed.
