Before baking this chicken dish, sprinkle the brandy on top, stand back, and light the liquid with a wooden match, then stir until the flames subside.
Ingredients:
* 1 whole chicken, cut into serving pieces * sea salt * 1/3 C. olive oil * 1/3 C. lime juice * 12 cloves garlic, cut into chunks * 3 Tbs. brandy
Directions:
Preheat oven to 375 degrees. Rinse and pat dry chicken pieces then sprinkle with salt and pepper. Arrange, skin side up, in a shallow baking dish. Place in the oven and brown on both sides about 25 minutes each, basting with the melted fat occasionally.
In a blender, mix the oil, lime juice and garlic. Process until mixture turns white and in completely blended then set aside. Remove the baking dish from the oven and drain as much fat as possible. Turn the chicken skin side up and pour the garlic sauce over the chicken pieces, coating thoroughly. Bake around 20 minutes, until thoroughly cooked, basting occasionally.
