This is the most unique carrot cake you've ever tasted!
Ingredients
*8 med. carrots *4 tsp. lemon rind *4 tsp. lemon juice *1 tsp. vanilla extract *6 Tbs. granulated sugar *1/4 C. vegetable oil *4 med. eggs *4 flour tortillas
Directions
Preheat oven to 350 degrees. Peel carrots and finely grate. Grate lemon rind. Ina small bowl, combine carrots, lemon rind, lemon juice, and vanilla extract. Set aside. Combine sugar with vegetable oil. Beat eggs, then stir them into the sugar and vegetable oil. Tear or cut tortillas into the 1/4-inch pieces. Ad tortillas and carrot mixture to the sugar and egg mixture. Mix well. Pour mixture into a 9-inch springform pan and bake for 1 hour or until top is brown.
