Mexican Orange Rind Desserts PDF Print E-mail

If you like chocolate-covered orange rinds, then you have to try this similar Mexican sweet!

Ingredients

*rind from 2 oranges
*1 C. pistachio nuts
*1 1/2 C. condensed milk
*3 C. white granulated sugar
*1/2 C. butter

Directions

Cut orange rinds into 1/4-inch pieces.  Chop nuts into small pieces. Place milk into the top of a double boiler and heat until scalded.  The milk will have a film on the top.  Melt 1 cup sugar in a large kettle on medium-high heat until it is a rich yellow color.  Add hot milk to the sugar.  Add remaining sugar, stir, and cook until it reaches 238 degrees on a candy thermometer.  Remove from heat.  Stir in rind, butter, and nuts.  Pour into a buttered 7x11-inch pan and place in a cool area until the candy reaches room temperature.
