Mexican Pecan Cake with Orange Glaze PDF Print E-mail

A delicious cake that is full of flavor!

Ingredients

*3 eggs
*1/2 C. pecans
*1/2 C. butter
*3/4 C. cake flour
*1 tsp. baking powder
*2/3 C. granulated sugar
*1 Tbs. lemon juice
*1/2 tsp. salt
*1/2 C. orange marmalade
*1/4 C. granulated sugar

Directions

Preheat oven to 350 degrees.  Separate eggs. Finely grate pecans.  Melt butter in a small saucepan on low heat.  Blend together the flour and baking powder.  Beat the egg yolks in a large mixing bowl until they are thick and lemon-colored.  Gradually beat in the 2/3 cup sugar.  Beat in lemon juice and grated pecans.  Gradually beat in the flour mixture.  Slowly beat in melted butter. Beat egg whites with salt until stiff peaks form. Fold beaten egg whites into the batter.  Pour batter in to a greased and floured 9-inch round cake pan. Bake for 30-35 minutes or until a tooth pick inserted into center comes out clean.  Let cake cool for 10 minutes before removing from pan.  Combine orange marmalade and 1/4 cup sugar in a small saucepan over medium-low heat. Cook until sugar is dissolved, stirring constantly.  White still warm, use mixture as a glaze for the cake.
