Traditional Champurrado PDF Print E-mail

This is a warm, thick, Mexican beverage that is unlike anything you've tried before!

Ingredients

*2 C. warm water
*1/2 C. masa harina
*2 C. milk
*one 3.3-oz. disk Mexican chocolate, finely chopped
*one 3-oz. piloncillo cone, chopped
*1/4 tsp. ground cinnamon or anise seed

Directions

Combine water and masa harina in a bowl and whisk until somewhat thickened.  Set aside.  Combine milk, chocolate, and piloncillo in a large saucepan over medium-high heat and stir until steamy and the chocolate and piloncillo have melted.  Do not boil.  Whisk in the masa mixture and cook, stirring, for a few minutes more until thickened.  Remove from the heat, add, ground anise seed or cinnamon, and place the bulbous end of a molinillo (traditional Mexican whisk) into the hot mixture.  Place the molinillo handle between your palms and rotate to froth mixture.  You can use a wire whisk if you do not have a molinillo.  Pour into mugs and serve.
