This recipe is so easy that you'll never forget it! I haven't!
Ingredients
*1 C. tomato salsa *12 corn tortillas *3 C. shredded beef *2 C. grated Monterey Jack cheese *2 C. red enchilada sauce
Directions
Preheat oven to 375 degrees. Ladle 1/2 cup of salsa into a 9x13-inch pan. Put 1/4 cup of beef in the center of each tortilla. Add 2 tablespoons shredded cheese. Roll up and place in a baking pan. When all the enchiladas are in the baking pan, cover with the remaining sauce and cheese. Bake for 15-20 minutes. |
