The meat marinade really gives these fajitas some incredible flavor!
Ingredients
*1/2 C. Mexican beer *2 Tbs. fresh lime juice *1 clove garlic, minced *2 tsp. ground cumin *1 1/2 lbs. skirt steak or flank steak *1 lg. onion, sliced into 1-inch rounds *1 red bell pepper, stemmed, seeded, and quartered *vegetable oil for brushing *salt and pepper, to taste
Directions
In a Ziploc bag, combine beer, lime juice, garlic and cumin. Add steak, seal bag, and toss to cover meat. Marinate in refrigerator for 1 to 8 hours. Prepare a hot fire in your grill and heat a cast-iron fajita pan on the stove top until very hot. Remove steak from marinade, pat it dry, and discard the marinade. Brush the onion slices, red bell pepper, and steak with vegetable oil and season to taste. Grill onion and bell pepper for 5-7 minutes per side or until charred and softened. Grill steak for 2 1/2 to 3 minutes per side for medium-rare. Let steak rest for 5 minutes, then slice on the diagonal and serve with grilled vegetables.
