Mushroom Fajitas PDF Print E-mail

Whoever said that vegetarian meals were boring never tried these fajitas!

Ingredients

*1 1/2 lbs. portabella mushrooms
*1 lg. onion, sliced into 1-inch rounds
*1 red bell pepper, stemmed, seeded, and cut into quarters
*vegetable oil
*salt and pepper, to taste
*flour tortillas, guacamole, and salsa for serving

Directions

Prepare a hot fire in your grill.  Brush the mushrooms, onion slices, and red bell pepper with vegetable oil and season to taste.  Grill the onion and bell pepper for 5-7 minutes per side or until charred and softened.  Grill mushrooms for 1 1/2 to 2 minutes per side or until you have good grill marks.  Slice mushrooms on a diagonal and serve with grilled vegetables, tortillas, guacamole, and salsa.
