This is unlike any flan you've tasted before!
Ingredients
*6 lg. eggs *one 14-oz. can sweetened condensed milk *2 tsp. vanilla extract *2 C. whole milk *2 C. half-and-half *2 Tbs. grated coconut *1 Tbs. ground pistachio meats
Directions
Preheat oven to 325 degrees. In a large bowl, gently stir together eggs, condensed milk, and vanilla extract. Pour milk and half-and-half into a medium saucepan and place on stove over medium-high heat. Bring to a boil, then remove from heat. Gradually pour egg mixture into hot milk, stirring constantly. Make sure no clumps of egg remain. Pass mixture through a strainer, then pour into a greased 9-inch cake pan. Sprinkle coconut and pistachio meats on top. Place pan into a large roasting pan and fill roasting pan with warm tap water until it is about halfway up the sides of the cake pan. Bake for 60 minutes. The center should feel firm when pressed, but not be browned. The edges may be slightly browned. Remove from oven and set aside to cool to room temperature. Cover and refrigerate for at least 4 hours before serving.
