Braised lamb shanks infused with wonderful Mexican flavors!
Ingredients
*2 Tbs. vegetable oil *4 lamb shanks *1 C. chopped onion *2 cloves garlic, minced *1 C. chopped, canned tomatoes, drained *2 canned chipotles in adobo sauce, diced, with some adobo sauce *1/2 C. brewed coffee *2 Tbs. packed brown sugar *1/2 C. tequila *salt and pepper *fresh cilantro sprigs
Directions
Heat oil in a large pot over medium-high heat. Add lamb shanks and brown on all sides for about 10 minutes. Transfer shanks to a plate and saute onion and garlic for about 4 minutes, or until transparent. Add tomatoes, chilies, coffee, sugar, and tequila, and cook, stirring, until the sugar melts. Return shanks to pot and bring to a boil. Reduce heat and simmer, covered, until the lamb is fork-tender, about 2 1/2-3 hours. Season to taste and serve with sauce, garnishing each plate with cilantro sprigs.
