Use your leftover turkey meat to make this fruity meal!
Ingredients
*4 C. cooked turkey meat *1 sm. yellow onion *1 C. pineapple chunks, drained *6 pitted prunes *1/4 C. dried apricots *1 Tbs. olive oil *1/2 C. fresh raspberries *1 tsp. salt *1 tsp. ground white pepper
Directions
Cut turkey into 1-inch chunks. Remove skin from onion and cut into quarters. Cut pineapple into 1-inch chunks if necessary. Cut prunes and apricots in half. In a large frying pan, heat olive oil to a medium temperature. Add turkey chunks and fry until lightly browned on all sides. Drain off oil and add onion, pineapple, apricots, prunes, raspberries, salt, and pepper to pan. Turn heat to low and cook for 1 hour, stirring periodically.
