Tostada Pizza Crisps PDF Print E-mail

Using a large cake dish on a pedestal is a convenient way to serve these tostada pizza crisps and it creates a dramatic and unique presentation. Place your toppings in individual serving dishes and have everyone create their own individual Mexican pizzas.

Ingredients

* 2 thin 12-inch flour tortillas
* 1 C. grated longhorn cheddar cheese
* 1 C. minced fresh cilantro
* 2 fresh green chiles, roasted, seeded and chopped
* 1/4 lb. Mexican Chorizo, cooked
* 4 slices lean bacon, fried and crumbled
* 1 firm but ripe avocado, peeled, seeded and cubed
* 20 black olives, chopped
* 1 C. Mexican cream, or sour cream thinned with milk
* salsa

Directions

Heat oven to 375 degrees. Place tortillas directly on the oven rack and bake 3-4 minutes. Remove from oven, sprinkle with cheese, and return to oven until cheese melts. Remove and place on a large plate. Spoon the selected topping on the melted cheese. Cut into pie-shaped triangles and serve immediately
