Mexican Eggs with Sausage & Corn PDF Print E-mail

This is one of my favorite breakfast recipes!

Ingredients

*1/2 lb. ground sausage
*1/2 lb. fresh corn
*12 eggs
*1/4 tsp. onion powder
*1/2 tsp. salt
*1/2 tsp. ground black pepper

Directions

Crumble sausage and saute over medium heat in a medium frying pan until cooked but not browned, stirring frequently.  Remove sausage and spread on a paper towel to absorb excess fat.  Wipe grease from the frying pan with a paper towel.  In a small saucepan, heat corn at medium temperature until thoroughly warmed.  Crack eggs into a medium bowl.  Add onion powder, salt, and pepper. Beat until light and fluffy.  Pour eggs in the frying pan and stir in sausage and corn. Cook over low heat, stirring frequently, until eggs are done.
