Posole with Pork PDF Print E-mail

Posole is a very thick Mexican stew.  This one is full of pork, veggies, and hominy.

Ingredients

*4 med. yellow onions
*6 med. red tomatoes
*12 fresh serrano chilies
*5 garlic cloves
*4 lbs. lean pork roast
*2 lbs. fresh or frozen hominy
*1/4 C. granulated sugar
*3 Tbs. salt
*1 tsp. ground black pepper
*2 C. fresh or canned tomato sauce
*2 Tbs. lemon juice

Directions

Peel onions and chop them into 1/4-inch pieces. Cut tomatoes into 1/4-inch pieces.  Remove stems and seeds from chili peppers.  Peel garlic and chop into 1/4-inch pieces.  In a large stew pot, combine roast, onions, chili peppers, garlic, hominy, sugar, salt, and pepper.  Cover with water and bring to a boil.  Turn heat to medium-low and cook until the meat is done and the hominy is tender but not mushy, about 3 hours.  Stir occasionally and add more water if necessary. Remove meat and shred.  Return meat to pot. Add tomatoes and tomato sauce.  Cook, uncovered, at medium temperature for 30 minutes.  Stir in lemon juice just before serving.
