Don't be afraid of trying pigs' feet! They give amazing flavor to any dish!
Ingredients
*1 lb. pork roast *3 med. potatoes *1 lg. white onion *3 med. carrots *8 garlic cloves *6 pigs' feet *2 quarts water *1 tsp. salt *1 tsp. dried oregano *1 C. fresh or frozen peas
Directions
Cut pork roast into 1-inch cubes. Peel potatoes and cut into 1-inch cubes. Peel onion and chop into 1/4-inch pieces. Peel carrots and cut into 1/4-inch rounds. Peel garlic and slice thinly. Put pigs' feet and onion into a large stockpot with the water. Add salt and oregano. Stir well. Bring to a boil. Boil, uncovered, for 30 minutes. Add remaining ingredients. Reduce heat to medium and simmer, uncovered, for 3-4 hours or until carrots are soft and meat is tender.
