BBQ Pork Ribs PDF Print E-mail

Directions

*1 sm. red onion
*12 garlic cloves
*8 fresh chipotle chilies
*1/2 C. water
*1/4 C. red wine vinegar
*1 C. honey
*1/2 C. Dijon mustard
*1 Tbs. dried oregano
*1 tsp. salt
*1 tsp. ground black pepper
*4 lbs. pork ribs

Ingredients

Preheat grill to medium setting. Peel onion and cut into 1/4-inch pieces.  Peel and mince garlic.  Remove stems from chilies.  Place the chilies in a small saucepan with the water.  Cove rand simmer on low setting for 10 minutes or until chilies are plump.  Drain off water.  Cut chilies into 1/4-inch pieces. Combine all ingredients except ribs in a medium saucepan. Stir well.  Bring mixture to a boil.  Cover and simmer for 10 minutes.  Use as a basting sauce while grilling ribs. Reserve 1/2 cup to be served as dipping sauce with the meal.
