Pork and Beans Mexicana PDF Print E-mail

Chili powder, pinto beans, and tequila make this recipe taste amazing!

Ingredients

*1/4 lb. sliced bacon
*1/4 lb. boneless pork tenderloin
*1/4 lb. ham
*1 lg. white onion
*1 1/2 C. canned, diced tomatoes
*1 tsp. chili powder
*1/2 tsp. ground cumin
*1/2 tsp. dried oregano
*2 C. canned pinto beans
*1 C. tequila

Directions

Cut pork and ham into 1-inch cubes. Peel onion and slice into 1/4-inch rounds.  Cook bacon on medium heat in a frying pan until crisp.  Reserve grease in the pan and transfer the bacon to paper towels to drain.  When cool, crumble.  Brown pork and ham in the bacon fat.  Add onion.  Turn heat to medium.  Cover and cook until soft, about 5 minutes.  Add tomatoes, chili powder, cumin, oregano, and crumbled bacon. Stir well.  Add beans and bring to boil.  Gradually stir in tequila.  Continue to cook, uncovered, for 1 hour or until pork is well done and mixture is the consistency of a rich stew. Stir occasionally.
