This is a tropical quesadilla that you won't forget!
Ingredients
*4 oz. fresh goat cheese, crumbled *1 garlic clove, crushed *1/4 C. chopped onion *1/2 poblano chile, roasted, stemmed, peeled, seeded, and diced *1/2 red bell pepper, roasted, peeled, seeded, and diced *2 tsp. minced fresh cilantro *1/4 tsp. salt *2 tsp. fresh lime juice *1 C. cooked and chopped lobster meat *1 papaya, peeled, seeded, and chopped *four 6-in. flour tortillas *2 Tbs. unsalted butter
Directions
In a large bowl, combine goat cheese, garlic, onion, peppers, cilantro, salt, and lime juice. Carefully blend in the lobster and papaya. Spread some lobster mixture over half of each tortilla and fold over. Brush each tortilla with melted butter. Heat a large nonstick skillet over medium-high heat. Cook quesadillas for 3-4 minutes, turning once, until browned on both sides. Cut each into triangles.
