Ditch boring tomato salsa and make this flavorful alternative, instead!
Ingredients
*2 lg. bell peppers *12 scallions *3 Tbs. fresh cilantro *1/4 C. black olives *1/3 C. grated Parmesan cheese *1/4 C. olive oil *4 Tbs. lime juice *1/2 tsp. salt *1/2 tsp. ground black pepper
Directions
Preheat oven to 350 degrees. Remove core and seeds from red peppers. Slice into 1/2-inch wide strips. Coat insides with olive oil and bake for 1 hour or until lightly brown. Let cool, then chop into 1/4-inch pieces. Remove skin from scallions and discard all but 2 inches of the white and light green part; chop into 1/4-inch pieces. Chop the cilantro into 1/8-inch pieces. Remove pits from olives and slice into 1/4-inch pieces. Combine all ingredients in a mixing bowl. Cover and refrigerate for 12 hours. Let stand until mixture reaches room temperature before serving.
