A nice change for your typical tomato salsa. Try it over grilled fish or chicken!
Ingredients
*2 med. cucumbers *2 key limes *1 clove garlic *1 med. white onion *2 sprigs parsley *1/4 C. lime juice *1 tsp. salt *1 tsp. granulated sugar *1/2 tsp. ground black pepper
Directions
Peel cucumbers and cut into 1/2-inch cubes Peel key limes and cut into 1/2-inch squares. Peel and mince garlic. Peel onion and cut into 1/4-inch pieces. Chop parsley into 1/4-inch pieces. Combine all ingredients into a medium bowl, then cover and refrigerate for about 3-4 hours before using.
