Jalapeno Jelly PDF Print E-mail

This spicy jelly is great as an appetizer and it's also delicious when served with meat.

Ingredients

*6 fresh jalapenos
*5 1/2 C. granulated sugar
*1 1/2 C. cider vinegar
*2 Tbs. fresh lime juice
*1 bottle pectin
*green food coloring

Directions

Remove the stems and seeds from the jalapenos and cut into 1/4-inch pieces.  Combine jalapenos, sugar, cider vinegar, and lemon juice in a large pot over medium-high heat; bring to a boil.  Boil for 5 minutes, stirring occasionally.  Stir in the pectin and boil for 1 minute.  Remove from heat and stir in 8 drops of food coloring.  Pour into sterilized jars, seal, and place in a hot water bath for 5 minutes.
