This shrimp recipe is full of fabulous flavor! If you don't like shrimp, leave them out (along with the red onions) and try putting the vinaigrette marinade on a salad!
Ingredients
*2 sm. red onions *1/2 tsp. cayenne pepper *2 lbs. fresh med. shrimp *1 jalapeno chili pepper *1-2 C. red wine vinegar *1 tsp. granulated sugar *1/2 tsp. salt *1/2 tsp. ground white pepper
Directions
Remove skin from onions. Cut 1 onion into 1/2-inch rings and add it to 2 gallons of water in a large stockpot. Add cayenne pepper. Bring to a boil and add shrimp. Cook for 10 minutes. Drain and discard onions. Run shrimp under cold water. Remove shells and back vein. Chop the other onion into 1/4-inch pieces. Remove the stem and seeds from the jalapeno and chop into 1/4-inch pieces. Mix together 1 cup of the red wine vinegar, the chopped onions, chilies, sugar, salt, and ground white pepper. Put the shrimp into a large glass or ceramic dish. Pour the sauce over the top, making sure all the shrimp are covered. If you need more sauce, add remaining cup of red wine vinegar. Chill in the refrigerator for 4-12 hours before serving.
