Sauteed Garlic Fish Fillets PDF Print E-mail

Serve these fillets with a complimenting side dish, like Mexican red rice or a crunchy cabbage salsa. If preparing for an adult party a Mexican beer or wine also goes great with these sauteed garlic fish fillets.

Ingredients

* 4 cloves garlic, finely minced
* 3 Tbs. lime juice
* 4 fillets red snapper; 8 oz. each, 1/2 inch thick
* sea salt and black pepper
* 1/2 C. flour
* 1/8 tsp. ground cayenne
* 2 Tbs. olive oil
* SAUCE:
* 2 Tbs. unsalted butter
* 8 cloves garlic, thinly sliced
* 1 tsp. lime juice
* 3 Tbs. chopped flat-leaf parsley

Directions

Puree the garlic with the lime juice. Lay the fish fillets in a glass dish, rub the garlic and lime juice paste over both sides of the fillets, and sprinkle with salt and pepper. Cover and refrigerate about 20 minutes. On a plate, mix the flour with salt, pepper and cayenne. Pat fish dry. Dredge the fillets with the seasoned flour.

Heat the oil in a skillet, put the fish in to fry, turning once , about 3 minutes per side. If needed season again. Remove the fish to a hot platter or individual plates and keep warm. Melt the butter in a small saucepan. Add the garlic and let fry slowly, about 3 minutes. Add the lime juice and parsley to the pan, swirl around, and pour the mixture over the fish and serve immediately.
