Chipotle Prawns PDF Print E-mail

For an impressive presentation serve these chipotle prawns in the center of a molded ring of white rice. The rice is a great counter to this full flavored, spicy dish.

Ingredients

* 1 lb. lg. raw prawns
* sea salt and freshly ground black pepper
* 3 Tbs. olive oil
* 5 lg. cloves garlic, thinly sliced
* 1 C. canned tomato sauce
* 2-3 canned chipotle chiles en adobo, with a little sauce
* 1/8 tsp. dried oregano
* 1/2 C. white wine

Directions

Heat the oil in a heavy skillet and saute the garlic over medium heat. Remove and put in a blender or food processor. Put the prawns into the skillet and cook briefly. Remove and set aside. Put the tomato sauce, 1-2 chipotle chiles, and oregano in the blender or food processor with the garlic. taste and add chile as needed. Pour into the skillet and simmer for 4-5 minutes. Add the wine, taste for seasoning. Add the prawns and cook for 1 more minute.
