Ingredients
*2 C. dry white rice *3/4 lb. Monterey Jack cheese *1/8 lb. cheddar cheese *1/4 C. canned, diced green chilies *1 pt. sour cream
Directions
Preheat oven to 350 degrees. Bring 4 cups water to a boil in a medium saucepan. Add rice, cover, and boil for 5 minutes. Reduce heat to low and simmer for 20 minutes or until tender. Drain off any excess water. Grate cheeses. Drain chilies and mix in sour cream. Grate cheeses. Drain chilies and mix into sour cream. In a 1-quart casserole, layer ingredients in the following order: half or rice, half of sour cream with jalapenos, half of Monterey Jack cheese, remaining rice, remaining sour cream with jalapenos, and remaining Monterey Jack cheese. Bake for 30 minutes. Top with cheddar cheese and broil for 2-3 minutes before serving.
