Simply seasoned and delicious, this rice and bell pepper mixture is fantastic!
Ingredients
*1 sm. onion *1 med. red bell pepper *1 med. green bell pepper *1 garlic clove *2 Tbs. butter *1 tsp. ground cumin *1 1/2 C. uncooked white rice *1 1/2 C. hot chicken stock
Directions
Peel onion and chop into 1/4-inch pieces. Remove stems, seeds, and membranes from peppers and cut into 1/4-inch pieces. Peel and mince garlic. Heat butter to medium temperature in a saucepan. Add peppers and onion, then cook until onion is limp but not brown. Add garlic, cumin, rice, and stock. Mix well and cover saucepan. Bring to a boil, reduce heat, and cook for about 20 minutes (or until rice is tender and liquid is absorbed).
