A wonderful, cheesy side dish!
Ingredients
*1 lb. dried lima beans *1 lg. white onion *1/4 lb. spicy sausage *1/4 lb. ham *1/4 C. vegetable oil *1 C. red chili sauce *1/2 C. Monterey Jack cheese, grated
Directions
Put lima beans in a large pot. Add water to cover. Soak for 1 hour. Bring to a boil, reduce heat, and cook until tender, about 1 hour. If beans seem dry after 30 minutes, stir in 1 cup more of water. Peel onion and cut into 1/4-inch rings. Cut ham into 1/2-inch cubes. Heat oil to medium temperature in a medium skillet. Add onion and sausage. Cook until sausage is browned. Add ham and chili sauce. Cover and cook for 30 minutes. Skim of excess fat. Add cooked beans and cook for another 15 minutes. Sprinkle with cheese before serving.
