Mexican Coleslaw PDF Print E-mail

Tasty bell peppers and chile peppers make this coleslaw unforgettable!

Ingredients

*4 C. cabbage, finely shredded
*1/3 C. olive oil
*1/2 sm. white onion, finely chopped
*1 red bell pepper, seeded and cut into very narrow strips
*1 yellow bell peppers, seeded and cut into very narrow strips
*1-2 fresh jalapeno chiles, seeded and minced
*pinch of dried oregano
*5 Tbs. red wine vinegar
*1 Tbs. sugar
*1 tsp. sea salt

Directions

Place cabbage in a large bowl. Heat oil in a medium skillet. Add onion, bell pepper, jalapenos, and oregano, then lightly saute.  Add vinegar and sugar, then bring just to a simmer. Remove pan from the heat and let mixture cool slightly.  When barely warm, pour it over the cabbage and toss thoroughly.  Sprinkle on salt.  Let slaw season for one hour or more in the refrigerator, tossing occasionally.
