These bacon flavored green beans are a great addition to any Mexican meal, they usually complement a garlic chicken main course and I like to serve them on top of spinach leaves.
Ingredients
* 1 lb. fresh green beans * 4 strips bacon * 1/2 onion, finely chopped * 1 tomato, chopped * pinch of cumin * sea salt and fresh ground pepper
Directions
Cut off the end of the beans and remove strings. Cut into 1 inch pieces and set aside. Fry the bacon, remove when crispy and drain. Pour off all but 1 tablespoon of the fat. Saute the onion in the bacon grease then add the tomato. Add the green beans and cover, stirring occasionally, for 20 minutes, until the beans are tender. Crumble the bacon and stir most of it into the beans. Add salt and pepper to taste. Place the beans on a serving plate and top with the remaining bacon. |
