You only need 7 simple ingredients to make this tasty soup!
Ingredients
*4 boneless, skinless chicken breasts *1 med. yellow onion *2 garlic cloves *1 Tbs. olive oil *1 C. tomato salsa *4 C. chicken stock *5 corn tortillas
Directions
Cut chicken breasts into 1-inch cubes. Remove skin from the onion and cut into 1/4-inch pieces. Remove skin from garlic and cut into thin slices. Heat olive oil in a large frying pan on medium. Add the chicken, onion, and garlic to the frying pan and cook until the chicken is brown on all sides. Reduce heat to low and add salsa and stock; mix well. Cook for 30 minutes, uncovered, stirring periodically. Tear tortillas into 1-inch pieces. Add to frying pan and stir well. Cover and simmer for 1 hour. Remove cover and simmer until the dish is moist but not runny.
