Everyone's had pork or chicken tacos- try some duck tacos for a nice change of pace!
Ingredients
*4 duck breasts, boned *2 Tbs. honey *1 clove garlic, minced *1 Tbs. fresh lime juice *salt and pepper, to taste *8 lg. flour tortillas, warmed *pineapple or mango salsa, to garnish *fresh chopped cilantro
Directions
Score the fat side of the duck breasts in a cross-hatch pattern with a sharp knife. Heat a large skillet over medium-high heat. Cook duck breasts, fat-side down, for 3-4 minutes or until fat has browned. In a small bowl, combine honey, garlic, and lime juice. Turn duck and brush or drizzle with half the mixture; reserve the rest. Cook the duck until medium-rare, about 3 more minutes. Remove from heat, season to taste, and let rest for 5 minutes. Slice duck on a diagonal. Place slices in center of each tortilla, drizzle with honey mixture, top with salsa and cilantro, roll up, and serve.
