Lobster Tacos PDF Print E-mail

Make gourmet tacos using one of my favorite foods: lobster!

Ingredients

*2 C. yellow pear tomatoes, halved
*2 serrano chiles, stemmed, seeded, and diced
*1/4 C. green onion, finely chopped
*8 oz. fresh and thawed lobster tails, shells removed
*vegetable oil for brushing
*salt and pepper
*1 C. lettuce, finely shredded
*1 C. guacamole
*8 taco shells

Directions

For salsa, combine tomatoes, chilies, and green onion in a bowl and set aside. Prepare a medium-hot fire in your grill or heat a grill pan over high heat indoors.  Brush the lobster tails with vegetable oil and season to taste.  Grill for 2-3 minutes per side or until they have good grill marks.  Remove lobster tails and chop the meat.  Portion lettuce among taco shells, then top with a dollop of guacamole and some of the warm lobster meat.  Serve with salsa.
