Tacos don't just have to be for dinner- try them for breakfast with this recipe!
Ingredients
*1 tsp. butter *1/2 C. tomato salsa *8 eggs *1/3 C. cream *1/2 tsp. salt *4 corn tortillas *1/2 C. shredded Monterey Jack cheese
Directions
Melt butter in large frying pan. Add tomato salsa and heat until onion is soft. Beat eggs with cream and salt. Pour egg mixture into salsa and cook over medium heat, stirring constantly, until eggs are set. While eggs cook, heat tortillas in an ungreased medium-hot skillet or griddle, turning frequently. Place a hot, soft tortilla on a plate and spoon eggs on top. Sprinkle with cheese. Serve immediately.
