| Grilled Steak Tacos |

My family is all about cooking on the grill, especially during the summer months, and we especially love the grilled flavor of these steak tacos. The recipe makes 8 large large tacos. Ingredients * 2 lbs. top round steak * 2 cloves garlic * 1/2 tsp. sea salt * 1/2 tsp. ground cumin * 1/2 tsp. crushed dried oregano * 1/2 C. red wine * 3 Tbs. safflower or canola oil * juice of 1 lemon or 2 limes * 1/2 tsp. ground black pepper * 1/2 tsp. sugar * flour tortillas, warmed GARNISH: * 2 C. salsa * 2 C. guacamole * 1 white onion, finely chopped * 1 C. chopped radishes (optional) * 2 limes, quartered Directions Trim the fat from the meat, then pound it slightly to tenderize it. Chop the garlic and mash with salt. Combine the garlic paste, cumin, oregano, wine, oil, lemon/lime juice, pepper, and sugar in a glass or stainless-steel bowl. Add the meat to the marinade, tuning several times so it is thoroughly coated. Cover and refrigerate, turning occasionally, for about 6 hours. When ready to cook, remove the meat from the marinade and set both aside. Bring the meat to room temperate. Light a charcoal fire and let it burn with the coals are evenly white and quite hot. Grill the meat until cooked as you like it. Set the steak on a cutting board, brush on the marinade, and let the meat stand, covered with aluminum foil, a minute or so to reabsorb the juices. When ready to serve, cut the meat scross the grain at a slight angle into thin slices and heap on a heated platter with a pile of hot tortillas close by. Have everyone fix their own tacos. Pile some of the meat on a tortilla, add slasa and other condiments, wrap it up, and start eating. |
